Among the Chateauneuf du Pape offerings there are three levels, with Les Olivets being the easiest and most accessible wine, and the Cuvee Reservee and Cuvee Prestige taking extract and concentration, as well as ageworthiness to more profound levels. The 1995 Chateauneuf du Pape Les Olivets offers up an attractive, spicy, peppery, jammy black-cherry-scented nose, sweet, round, generously-endowed flavors, medium to full body, and a low acid, lush finish. It is a wine to drink over the next 6-7 years.

Roger Sabon, the former mayor of Chateauneuf du Pape, continues to turn out very well made wines. Several years ago he stopped filtering, and guess what? Sabon claims he is thrilled with how much more complexity and character his wines exhibit by the simple elimination of this damaging practice.
