With the Chablis Montee de Tonnerre, Droin experimented with different types of new oak and found that he "despised the effects of American and Russian oak" so he felt compelled to sell off those barrels. The final assemblage is 20% from wine aged in new oak with the balance having been in stainless steel cuves. It displays stones, toasty oak and traces of vanilla aromas as well as a medium-to-full-bodied, silky, and intensely powerful core of smoky liquid minerals. This well-crafted and focused wine should be at its peak between 2000 and 2005.
