The ultra young 2015 Diego Ecológico is produced with Vijariego Blanco grapes from organically farmed vineyards. The whole clusters from low-yielding, old vines grown on volcanic soils covered with ashes are lightly pressed, and the must is fermented with neutral yeasts in stainless steel vats. It has some reductive, leesy aromas with some sulfur hints and a core of simple white fruit. It's light, fresh and a little tart with an exotic touch, quite straightforward. 12,000 bottles produced.
