The 2017 Block 2 Cabernet Sauvignon (with the black front label) is Hay Shed Hill's more serious Cabernet, with an intense, saturated color. It's medium-bodied and relatively crisp, with cassis fruit hung on a backbone of acids and framed by barely noticeable French oak.

Produced from 100% Cabernet Sauvignon vines planted in 1973 in the Willyabrup sub-region, the 2009 Block 2 Cabernet Sauvignon has a deep garnet-purple color and pronounced black cherry compote and blackberry preserve aromas over Indian spices, dried mulberries and cedar. Full bodied with concentrated berry flavors, it has a solid foundation of high acid and firm tannins, finishing long with just a suggestion of Mediterranean herbs. Matured 18 months in French oak, 35-40% new, and containing a little Petit Verdot, the 2008 Block 2 Cabernet Sauvignon presents a deep garnet-purple color. The nose is youthfully closed with delicate aromas of cassis, Mediterranean herbs, espresso and loam. Tautly structured with high acidity and a medium to firm level of fine tannins, the palate provides concentrated fruit, and medium to full body and long finish. Resist the temptation to broach it now and consume it 2012 to 2020+. Among the pioneering Margaret River vineyards, Hay Shed Hill’s original vines were established in the early 1970s. The Morrisons purchased the property in 1989 and developed it into a very respectable 18 hectare estate. They sold it in 2000 to a wine investment group after which focus and quality went through a difficult patch. Winemaker Michael Kerrigan took over the property in December, 2006 and set about restoring the original vineyard’s glory. His emphasis is on producing purely 100% estate grown wines. The 2007 Cabernet Sauvignon Block 2 is purple-colored with a bouquet of fresh herbs, olives, sage, thyme, and cassis. On the palate this medium-bodied, elegant Cabernet is smooth textured, racy, and nicely balanced. Give it 2-3 years to fill out and drink it from 2011 to 2019.
