The 2008 Edom is the winery’s Bordeaux blend, 81% Cabernet Sauvignon, 11% Petit Verdot and 4% each of Merlot and Cabernet Franc, all aged for 14 months in French oak. A touch herbaceous on opening, it comes around pretty nicely and integrates its parts very well. It is nicely crafted, with an elegant mid-palate, good balance and some moderate tannins cropping on the finish. It has the most upside of the releases reviewed in this issue; drink the ‘09 Cabernet early, this one a couple of years later. Not terribly complex, it is nonetheless pleasing and gracious.
