Representing the majority of their production, the young unoaked white 2019 Txakoli is a fresh, fruit-driven and slightly sparkling wine with moderate alcohol and notable acidity balanced by some five grams of residual sugar. It's produced in an easy-to-understand way, kept with the lees for six months. Unfortunately, for a wine designed to be drunk young and fresh, the wine feels quite reductive/sulfury when young, and it's difficult to enjoy. The palate is lightly spritzy, with a faint bittersweet touch in the finish. 500,000 bottles.

The 2015 Txakoli White is bottled with unreleased carbon dioxide, which gives it a spritz of freshness. Made from two local grapes, 90% Hondarrabi Zuri and 10% Hondarrabi Beltza, the wine is basically the Spanish version of a Muscadet from France, but with loads of CO2, plenty of minerality, crisp grapefruit and other almost lemon/lime-like citrus. It is light-bodied, crisp and the perfect marriage for the seafood and shellfish of the local area.

Made from one of the most beautiful areas of Northern Spain where the vines slope down to the Bay of Biscayne near the fishing village of Getaria, the 2014 Txakoli White is 90% Hondarrabi Zuri and 10% Hondarrabi Beltza. The wine shows a touch of trapped CO2, which is intentional, as it's aged sur lie for eight months prior to bottling. The wine has crisp oyster shell, grapefruit and citrus oil notes, is fresh and dry -- a perfect foil for the shell fish and seafood of the local waters. It is best drunk in its first couple years of life.

Txomin Etxaniz’s 2009 Txakoli de Guetaria remains the prototype. Light straw-colored with an enticing bouquet of sea salt, mineral, baking spices, spring flowers and green apple, on the palate it is crisp, vibrant, impeccably balanced, and totally refreshing. But beware, its low alcohol and hint of spritz makes it go down very easy; in an instant the bottle is empty and you’re ready for more. Fermented and raised sur lie in stainless steel, the 2008 Txakoli has a nose of slate/mineral, white peach, and green apple. This is followed by a crisp, dry, vibrant, light-bodied white that calls out for some of Spain’s great shellfish. Balanced and lengthy, it should be drunk over the next 12-18 months.
