Pascal Cacheux was kind enough to allow me to re-taste this dark ruby-colored wine at the end of my visit. The saliva-inducing scents of bacon had dissipated, being laced with toast-infused, blackberry and cassis aromas. It is a concentrated, mouth-coating, full-bodied, powerful, and deeply ripe wine with densely packed red and black cherries, plums, and grilled oak notes. This silky-textured and extremely refined beauty should hit its stride in 2005, yet hold through 2012.
