From the site of an old quarry south of town, high above Poiret and Ronciere, Jayer’s 2005 Nuits-St.-Georges Les Hauts Poirets opens with scents of resin, vanilla and ultra-diverse ripe black fruits. In the mouth, it displays intense concentration of, on the one hand, caramelized black fruits and jam, and on the other, a positively lip-smacking, cheek-slapping fresh, tart and vigorous manifestation of fruit. Underlying roasted meat and chalk characteristics emerge in a finish of persistent vibrancy and intensely ripe, pure, clear fruit, framed but not fenced-in by the oak.
