The 2000 Cabernet Sauvignon, although made from frightfully low yields of .67 tons of fruit per acre, is more monolithic and less juicy/succulent than previous examples. A dark ruby/purple color is accompanied by a closed, monolithic (at least when I tasted it) Cabernet with plenty of depth as well as austere tannin in the short finish.
