The 2007 Eleventh Hour is 100% Shiraz from 60- to 125-year-old vines that were saved from the bulldozer at “the eleventh hour”. The wine is aged in predominantly seasoned French oak for 20 months. A glass-coating opaque purple color is followed by a super-fragrant perfume of cigar box, baking spices, violets, incense, smoke, bacon, and blueberry. Layered on the palate, the wine is surprisingly opulent for the vintage as well as impeccably balanced. Generous, succulent flavors are complemented by ample ripe tannins leading to a lengthy, pure finish. Give it 2-3 years of additional cellaring and drink it through 2022.
