Deep garnet colored with a touch of brick, the 2000 Cabernet Sauvignon gives aromas of ripe cassis, dried Provence herbs plus touches of black olives, truffles and earth. Full bodied and packed with rich, mature fruit, it has a medium level of grainy tannins, crisp acid and a long finish. Delicious now, it should continue to cellar to 2017+.
Catching-up with owner Brian Lynn recently, in addition to his current releases I tasted through verticals of Majella’s Riesling, Cabernet Sauvignon, Shiraz and The Malleea to track the evolution of the styles. The results go to show, it certainly pays to put a few bottles of these well constructed wines away.
