The darkest-colored wines of the four offerings from St. Innocent are the Seven Springs Vineyard and Freedom Hill Vineyard. The 1994 Pinot Noir Seven Springs Vineyard boasts a dark ruby/purple color (slightly more purple than the Temperance Hill), concentrated, tannic, backward flavors (one can understand the decision to delay the release of this wine until September), full body, considerable power and richness, and a gorgeous smoky, rich, gamey, black-cherry-scented and flavored personality. One of the more structured St. Innocent 1994 Pinots, it should have 8-10 years of aging potential. Cellar this big, Burgundian-styled Pinot Noir while gulping down the O'Connor and Temperance Hill offerings. Six hundred and ninety-one cases from yields of 2.2 tons per acre were produced. Winemaker/proprietor Mark Volossak has turned in four superlative efforts in 1994. Only the Temperance Hill and O'Connor Vineyard have been released. The Seven Springs and Freedom Hill will be released in September. They are all gorgeously constructed Pinot Noirs with slight personality variations. Kudos to St. Innocent, which has had an enviable track record over the last few years.
