The 2005 Savigny-les-Beaune Les Jarrons smells of fresh and distilled plum and smoked meats. Flavors of salted beef with fresh plum and cherry are tinged with notes of vanilla and flowers, leading to a firm, bright finish. Based on the fundamental ripeness and firm structure of this tightly-wound wine and on the proclivities of this site, one can expect this wine to gain significant interest if held for 7-10 years.
Based on the evidence of these 2005s (which I tasted just after bottling, with their importer and not at the domaine), the new generation intends not to violate the distinctively old-fashioned charms which have always characterized Guillemot wines at their best, but perhaps they can introduce some needed consistency. As a group these wines offer good value, at least for tasters to whom their style appeals.
