Seven Hills has consistently done fine work with its Merlot and Cabernet Sauvignon produced from the Seven Hills Vineyard. The 1989 Cabernet Sauvignon-Seven Hills Vineyard reveals a saturated, purple/black color, and an unevolved but promising bouquet of ripe, jammy, cassis fruit, herbs, and licorice. Dense and rich, with a full-bodied, tannic personality, this big, brawny Cabernet Sauvignon needs at least 3-4 years of cellaring. Anticipated maturity: 1996-2005.
