The latest releases begin with the 2007 Cabernet Sauvignon Seven Hills Vineyard aged in 40% new oak. Deep purple-colored, it gives up an aromatic array of pain grille, pencil lead, mineral, spice box, violets, and black currant. Medium-bodied, ripe, and savory, on the palate it has good volume, layered fruit, and plenty of spice, leading to a moderately lengthy finish. Still young, steely and firm, but classy and deep. This has the best attributes of the ’05 and ’06 Columbia Valley Cabs from Seven Hills—ripe and polished black fruits, firm tannins, a supple finish with a veneer of smoke and licorice.
