The latest releases begin with the 2007 Cabernet Sauvignon Seven Hills Vineyard aged in 40% new oak. Deep purple-colored, it gives up an aromatic array of pain grille, pencil lead, mineral, spice box, violets, and black currant. Medium-bodied, ripe, and savory, on the palate it has good volume, layered fruit, and plenty of spice, leading to a moderately lengthy finish. It merits 2-3 years of cellaring and will offer prime drinking from 2012 to 2022.
The Seven Hills Winery was established in 1988 with current production standing at 14,000 cases.
