The 2005 Cuvee Persia is 100% Roussanne aged six months in barrel, and then moved to tank prior to being bottled. The wine is limited, only around 500 cases produced, but it is the best dry white of the Cotes du Ventoux, exhibiting lovely honeysuckle notes with rose petal, crushed rocks, and other floral notes. It is crisp, medium to full-bodied, and a beauty that should drink well for 2-3 years. One of the best run if not the finest estate in the Cotes du Ventoux is Fondreche. Shrewd consumers should have been stocking up on these wines for a number of years as they represent terrific values.
