The 2008 Persia (white) is made from 100% Roussanne from two separate parcels, one planted in sandy soils and the other on those famed round boulders (which, in some cases, can be as large as footballs), les galets roules. This wine smells of rose petals, ripe peach, orange marmalade, and honeysuckle. Full-bodied, dense, and rich, with crisp acidity, this is a bigger, bolder wine meant to be drunk with more intensely flavored food dishes. Again, it is probably best drunk in its first 1-2 years of life. One of the consistently superb estates in the Cotes du Ventoux, Domaine de Fondreche offers very high quality and reasonable prices. The creation of Sebastian Vincenti and Manou Barthelemy, these wines are bursting with fruit and have loads of minerality and aromatics. They are beautiful efforts representing the best of what a young generation of French producers can do. The estate is just under 100 acres in size and is now 100% biodynamically farmed.
