The 2008 Xarello Pairal is produced from over 65-year-old Xarello vines and is fermented in new 450-liter chestnut barrels – the tradition of yesteryear – and aged for 24 months in bottle. It has a golden color, with slightly oxidative notes of caramel, pollen, beeswax and honey, intermixed with aromas of white fruit and flowers. The palate is round and full, quite lively, with fresh acidity and a tasty, salty finish. I feel this could have been released earlier. Drink now.
