This is an example of just how slowly the white Domaine de Chevalier matures. Most purchasers, I am sure, have consumed this wine, but it is just beginning to open up and blossom. The rich aromas of melons, herbs, and oak gently ascend from the glass. In the mouth, this medium-bodied wine has excellent richness, a persistence on the palate, and a long, crisp finish.
