Guillemot’s 1999 Savigny-lès-Beaune 1er Cru Aux Serpentières is drinking beautifully, opening in the glass with notes of smoky red-black fruit, chocolate, dried herbs and a subtle framing of cedary new oak. On the palate, the wine is medium-full, with a sweet core of ripe fruit, a bright line of acidity and a fine chassis of tannins. This is still youthful but can be approached with pleasure.
