With flinty notes on the nose, the Firriato 2021 Etna Bianco Cavanera Ripa di Scorciavacca has a rather neutral bouquet with citrus, wild flower and crushed stone. The wine is steely, fresh and crisp, with a mineral-driven personality (especially when consumed young). Give this bottle an additional year or two before popping the cork.

The 2017 Etna Bianco Cavanera Ripa di Scorciavacca is mildly floral with white rose and honeysuckle that cede to citrus, white grapefruit and honey. Following that pretty floral bouquet, the mouthfeel is lean and snappy, making this a perfect seafood white.

A bit closed aromatically speaking, the 2016 Etna Bianco Cavanera Ripa di Scorciavacca is more reduced despite being released later than its peers. The blend is 60% Carricante and 40% Catarratto, and the bouquet opens to mild notes of crushed stone and flint with preserved lemon and yellow rose. The wine closes with a slightly evolved and dusty note of volcanic ash and cigar smoke. Some 13,000 bottles were produced.

A blend of Carricante and Catarratto, the 2015 Etna Bianco Cavanera Ripa di Scorciavacca shows a thin structure that is compensated by ample aromas of flint, crushed stone, honeysuckle and white peach. This is a delicate and pretty southern Italian white with a silky mouthfeel and crisp acidity at the end.
